Basic Potato Croquettes

    This is a great use for leftover mashed potatoes - so good you'll find you are making extra potatoes on purpose! Add cheese or bacon if you like.

    Serves: 6 

    • 4 tablespoons plain flour
    • 1 1/2 teaspoons baking powder
    • 1/2 teaspoon salt
    • 155g mashed potatoes
    • 1 egg, beaten
    • vegetable oil for deep frying

    Preparation:10min  ›  Cook:5min  ›  Ready in:15min 

    1. In a medium bowl, stir together the flour, baking powder and salt. Mix in the mashed potatoes and egg until well blended.
    2. Heat oil in a deep fryer or heavy deep frying pan to 180 degrees C. Carefully drop the potato mixture by spoonfuls into the hot oil, and fry until golden brown, about 5 minutes. Remove from oil to drain on kitchen roll.

    Very quick, very easy, I used SR flour instead of plain with baking powder as I didn't have any but it worked fine. I will be deliberately making too much mashed potato now!  -  28 Mar 2012


    Something else. Also added a good handful of diced ham. Chopped Bacon might be nice too. I used a dry grated Parmesan cheese and this stopped the stickiness. This recipe is an easy one for quick snacks or a leisurely Sunday night of Slow Food..  -  01 Aug 2010


    This is such a great idea for leftover potatoes. I don't have any kids...but I do watch over younger siblings and a niece...they love this stuff. I made it just because they were really hungry and I didn't have anything for them to eat. Now they ask my mum to make it for them. Thanks.  -  29 Sep 2008
