Ham Pita Sandwiches

    Here's a great lunch box meal kids can assemble themselves, right there at the lunch table! You can use chopped chicken for variation.

    Serves: 1 

    • 1/2 cup ham, chopped
    • 1/2 cup grated lettuce
    • 1/4 cup grated carrot
    • 1/4 cup Ranch dressing
    • 1 pita bread, cut in half

    1. Place ham, lettuce and carrot in a resealable plastic bag. Pour Ranch dressing into a small resealable container. Wrap the pita bread in cling wrap. Pack the ham mixture, Ranch dressing and pita bread along with a spoon in a lunch box or bag until lunch time.
    2. Assemble by spooning the ham mixture and vegetables into each pita half and drizzling the Ranch dressing on top.

    My niece just loved this and it was perfect for her "snack time" at school. She's too little to assemble the pita herself or at least that's my thought so I assembled it for her and added some cheddar cheese.
