Lemon Banana Granita

    This is a very refreshing and not too sweet granita, perfect for hot summer days. If the end result is still slightly too bitter blend in sugar to taste.

    Serves: 2 

    • 1 1/2 cups crushed ice
    • 1 ripe banana
    • 1/2 lime, juiced
    • 1/2 lemon, juiced
    • 1 tablespoon shredded coconut, as garnish
    • 2 pitted cherries, as garnish

    Preparation:5min  ›  Ready in:5min 

    1. Blend the ice and banana together in a blender set to Low until mixed, adding the lime juice and lemon juice as it blends to keep the ice from freezing to the side of the blender. Serve in a tall glass and garnish with coconut or a cherry.

    A very basic, refreshing smoothie with a convoluted name. Made this with optional coconut. Without either of the optional ingredients, this smoothie would be rather ho-hum. I think the three reviews preceding mine over a 3 year period is a function of the odd name given to this recipe since it does not pull up in a ingredient search of ‘smoothies’ or under AR’s ‘Banana Smoothies’ collection.     This is a very refreshing cocktail for a hot weather. Following the recipe, I realized it needs a little sugar for me. I added 1/2 teaspoon brown sugar and it was perfect. I tried to add a little coconut milk for the next portion and liked it too.
