Sauteed Chicken with Lemon and Fresh Thyme

    Chicken and lemon are a great combination and this recipe adds fresh thyme for an extra flavour boost. This is great as a main dish with rice or in a salad.

    Serves: 4 

    • 2 tablespoons olive oil
    • 1 clove garlic, minced
    • 6 sprigs fresh thyme, leaves stripped and chopped
    • 1 tablespoon lemon zest
    • 1/4 cup (65ml) lemon juice
    • salt and pepper to taste
    • 500g chicken breast tenders
    • olive oil-flavoured cooking spray

    1. Combine the olive oil, garlic, chopped thyme, lemon zest and lemon juice in a large mixing bowl. Season the chicken tenders with salt and pepper. Toss chicken with the olive oil mixture; allow to marinate for 5 minutes.
    2. Spray a non-stick frypan with cooking spray and place over medium-high heat. Cook chicken tenders in the hot pan until lightly browned and cooked through, about 4 minutes per side.

    My family thought this was really good. I did not have fresh garlic or thyme so I used 1 tbsp garlic powder and 1 tbsp dried thyme. Also, I did not have a fresh lemon on hand, so no lemon zest. However, we found that it had a great lemony flavor without the zest. Very flavorful, but I'm sure it would have been even better with fresh ingredients.
