Lemon Walnut Bars

    This is an old recipe but it has withstood the test of time. Lemon bars with coconut and walnut, easy to make, delicious to eat.

    Serves: 12 

    • 85g butter
    • 1 cup (125g) plain flour
    • 2 tablespoons white sugar
    • 2 eggs, beaten
    • 1/2 cup (90g) packed brown sugar
    • 3/4 cup shredded coconut
    • 1/2 cup chopped walnuts
    • 1/4 teaspoon salt
    • 1/4 teaspoon baking powder
    • 1/2 teaspoon vanilla essence
    • 2 teaspoons lemon zest
    • 2 tablespoons lemon juice
    • 1 cup (185g) sifted icing sugar

    1. Preheat oven to 180 degrees.
    2. In a medium bowl stir together the 2 tablespoons of sugar with the 1 cup of flour. Cut in the butter until mixture is coarse crumbs. Press firmly into the bottom of a 25cm square baking pan. Bake for 10 to 15 minutes in the preheated oven. Set aside to cool.
    3. In the same bowl stir together the sugar, salt and baking powder. Add the eggs and vanilla, mix well. Stir in the coconut and chopped nuts until everything is coated. Spread the mixture evenly over the baked crust. Return to the oven to bake for an additional 25 to 30 minutes.
    4. To make the icing combine the lemon zest, lemon juice and icing sugar. Beat until smooth. Pour and spread over the top of the bars as soon as they come out of the oven. Cool for 15 minutes before cutting into bars.

    EXCELLENT!! Was gone almost as fast as it was made. I really don't like coconut or walnut... BUT.. THIS was OUTRAGEOUSLY GOOD.. & EASY ~! I used about 2x the lemon juice.     Ok, I have no idea what the other reviewers commented on, but I don't think it was this recipe?! I LOVE sweets, and in fact being 1 of 7 kids (Big Family) I am the one everyone calls for the "next best dessert" recipe. The icing was way too tangy for the almost pecan pie type underfilling. Imagine a Pecan pie with a tangy lemon icing on top. Not my idea of a good dessert. Sorry to be so negative but these were just not good at all.
