Lemon Cream Cheese Icing

    This is a great lemony cream cheese icing. It goes well on any kind of cake but is especially good on a yellow cake or carrot cake.

    Serves: 15 

    • 250g cream cheese, softened
    • 65g butter
    • 2 tablespoons lemon juice
    • 2 teaspoons lemon zest
    • 1 teaspoon vanilla essence
    • 5 cups (800g) icing sugar

    1. Beat cream cheese, butter, lemon juice, lemon zest and vanilla together until smooth and fluffy. Add icing sugar in 2 additions. Beat until creamy. Add more icing sugar or juice as needed for easy spreading. Makes about 4 cups.
