Molasses Spice Biscuits

    These biscuits may seem complicated but they are delicious and worth the effort. Here's a tip: if you want soft biscuits, put half an apple in the container for several days.

    Ingredients
    Serves: 96 

    • 1 cup (250g) honey
    • 1/4 cup (65ml) dark molasses
    • 1 tablespoon ground cinnamon
    • 1/4 teaspoon ground nutmeg
    • 1 1/2 teaspoons ground cloves
    • 4 tablespoons chopped mixed peel
    • 1 cup chopped blanched almonds
    • 1 cup (185g) brown sugar
    • 1 teaspoon lemon zest
    • 1 1/2 teaspoons orange zest
    • 1/2 teaspoon bicarb soda
    • 2 teaspoons hot water
    • 1 egg, beaten
    • 4 1/2 cups (550g) plain flour

    1. In a large bowl stir together the honey, molasses, cinnamon, nutmeg and cloves until well blended. Mix in the peel, almonds, brown sugar, orange and lemon zests. Stir the bicarb soda into the hot water then beat into the mixture along with the egg.
    2. Gradually mix in the flour. The dough should be very stiff - you may need to knead it on the counter to get it thoroughly blended. Cover and chill overnight so the flavours can ripen.
    3. Preheat oven to 180 degrees C. On a lightly floured surface roll the dough out to 1cm thickness. Cut into bars about 5cm long and 2cm wide. Place biscuits 3cm apart onto ungreased baking trays.
    4. Bake for 12 to 15 minutes in the preheated oven until the bottoms are only starting to brown. Remove biscuits to cool on wire racks. Ice them with a thin glaze while they are still warm, if you like. When cool store in a tightly closed container.

    I loved this recipe. The last time I made Lebkuchen it was with my German mother. She passed away years ago and I couldn't find her recipe. I searched for one that sounded the same and this was it. When I made it, it was exactly like hers. Even my kids loved it and thought it was her recipe.     Having been stationed in Germany many years ago, I fell in love with lebkuchen. I have tried many recipes over the years and this is one of the better ones. I did not change a thing and am quite happy with the results.
