Quick Spinach Lasagne

When you don't have the time to put together an elaborate lasagne you can make this dish with only a few pre-made ingredients. It's delicious!


Serves: 5 

  • 250g penne
  • 800g spaghetti sauce
  • 1/4 cup grated Parmesan cheese
  • 300g frozen chopped spinach
  • 250g grated mozzarella cheese

  1. In a large pot with boiling salted water cook penne until al dente. Drain.
  2. In a large bowl combine spaghetti sauce, grated Parmesan cheese and cooked and drained pasta.
  3. In a separate bowls place cooked spinach and grated mozzarella cheese. Reserve 1/2 cup of grated mozzarella cheese for top.
  4. To assemble, in a 2 litre casserole dish layer half of the pasta mixture, spinach and grated mozzarella cheese. Repeat. Cover with aluminium foil.
  5. Bake in a preheated 180 degree C oven for 30 minutes. Remove from oven, sprinkle remaining 60g grated mozzarella cheese over top and bake until cheese melts.
