    This is a very convenient dish. I make several at one time and freeze what I don't use for dinner. Then I just take from the freezer what I need, thaw, bake and voila!

    Serves: 10 

    • 10 wide sheets lasagne
    • 600g chopped frozen broccoli, thawed and drained
    • 470g ricotta cheese
    • 2 cups grated mozzarella cheese
    • 4 spring onions, chopped
    • 2 teaspoons dried basil
    • 1/4 teaspoon ground nutmeg
    • 1 kg jar spaghetti sauce
    • 1/2 cup grated Parmesan cheese

    1. Preheat oven to 180 degrees C. Lightly grease a 20x30cm baking dish.
    2. Bring a large pot of lightly salted water to a boil. Add lasagne and cook for 8 to 10 minutes or until al dente; drain and rinse.
    3. In a large bowl combine broccoli, ricotta cheese, mozzarella cheese, spring onions, basil and nutmeg.
    4. Spread about 1/2 cup of the broccoli mixture along each sheet of lasagne. Roll sheets to form tubes. Place in prepared dish. Spoon spaghetti sauce on and around rolls and top with Parmesan cheese.
    5. Bake in preheated oven for 30 minutes.
