Adobo seasoning, if you can find it, is a Latin American seasoning comprised of garlic, oregano and other herbs. It's great with almost all meats. Duck sauce if a fruity dipping sauce that can be found in Asian shops.


Serves: 6 

  • 1.4 kg lamb chops
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon adobo seasoning
  • cayenne pepper to taste
  • salt and pepper to taste
  • 1 1/2 cups (350ml) duck sauce

Preparation:25min  ›  Cook:1hour20min  ›  Ready in:1hour45min 

  1. Preheat oven to 180 degrees C.
  2. Arrange lamb chops in a medium baking dish and evenly coat with Worcestershire sauce, adobo seasoning and cayenne pepper. Season with salt and pepper.
  3. Bake 1 hour in the preheated oven.
  4. Cover lamb chops with duck sauce and continue baking 15 to 20 minutes until done.

I love lamb chops every way I have tried them but these are the best I have had in a while. I made my own adobo rub from a recipe on the US site. In place of duck sauce I made a light glaze of tart marmalade mix with a small bit of Worcestershire sauce. - 11 Sep 2013
