Easy Chocolate Meringues

    Meringues are tasty and useful dessert or decorations. This is a very easy meringue recipe. They are pretty and have a delicate chocolate and coffee flavour.

    Serves: 6 

    • 1 egg white
    • 1/8 teaspoon cream of tartar
    • 2 tablespoons caster sugar
    • 1/4 teaspoon vanilla extract
    • 1 tablespoon cocoa powder
    • 1/2 teaspoon instant coffee

    Preparation:10min  ›  Cook:40min  ›  Ready in:50min 

    1. Preheat oven to 120 degrees C.
    2. Beat egg white and cream of tartar with a mixer at high speed until soft peaks form. Gradually add sugar, vanilla, cocoa and coffee granules.
    3. Spoon mixture onto aluminium foil lined baking tray in 12 mounds. They should be about 5cm apart.
    4. Bake for 40 minutes or until firm. Turn off oven and let meringues cool in oven for 1 hour. Do not open oven door while cooling.

    This is my first meringue attempt so I am not sure how it is supposed to taste. I doubled the recipe and I would make them again. I have been dieting and these are great for a nice chocolate treat.  -  21 Jul 2008


    These came out of the oven flat and deflated looking. The flavour was excellent, but the texture left something to be desired. They didn't dissolve in the mouth the way meringues usually do, and were fairly hard. I'll make these again to see whether my hunch about beating them more is true, but will also try other recipes.  -  21 Jul 2008
