Strawberry Cashew Salad

    You'll be delighted and surprised at the combination of strawberries and spinach with creamy cashew dressing. You can also make this with walnuts in place of cashews.

    Serves: 8 

    • 1/2 cup (125ml) olive oil
    • 1/3 cup cashews
    • 1/4 cup (65ml) warm water
    • 3 tablespoons honey
    • 1 tablespoon lemon juice
    • 2 teaspoons white vinegar
    • 3/4 teaspoon soy sauce
    • 2 cloves garlic
    • 375g baby spinach leaves
    • 1/2 cup chopped cashews
    • 1 cup sliced strawberries
    • 1/2 cup sliced fresh mushrooms

    Preparation:15min  ›  Extra time:1hour chilling  ›  Ready in:1hour15min 

    1. Blend the olive oil, 1/3 cup cashews, warm water, honey, lemon juice, white vinegar, soy sauce and garlic in a blender until smooth and creamy; chill in refrigerator for 1 hour.
    2. Toss the spinach, 1/2 cup chopped cashews, strawberries and mushrooms in a large bowl until mixed; drizzle chilled dressing over the salad and toss lightly.

    Love it! Wonderful flavor and very creamy -- tastes even better the next day. For me 2 cloves of fresh garlic was a little much, but roasting the garlic it was ok.
