Macaroni Salad with Capsicum and Olives

A quick and easy macaroni salad with capsicum, onion, olives and a creamy dressing. Great for when you have to bring a plate because it's ready in 30 minutes.

Serves: 10 

  • 500g macaroni
  • 1 cup creamy salad dressing
  • 1 tablespoon cider vinegar
  • 2 tablespoons milk
  • 1 1/2 stalks celery, diced
  • 190g pitted black olives, diced
  • 1/2 cup sweet onion, diced
  • 1/2 cup green capsicum, diced
  • 1/2 teaspoon salt
  • ground black pepper, to taste

  1. Bring a large saucepan of lightly salted water to the boil. Add macaroni cook for 8 to 10 minutes or until al dente; drain.
  2. In a medium bowl, blend salad dressing, cider vinegar and milk.
  3. In a large bowl, mix the cooked macaroni, celery, olives, onion and green capsicum. Toss with the salad dressing mixture. Season with salt and pepper. Cover and chill until serving.
