    This is a great tuna salad based on beans rather than potato or pasta. We like it spicy, but you can reduce the amount of chilli if you prefer.

    Serves: 8 

    • 4 (185g) tins tuna in olive oil
    • 1 red onion, diced
    • 1 orange capsicum, diced
    • 1 red capsicum, diced
    • 1 (420g) tin four bean mix, drained
    • 2 green chillies, finely chopped
    • 1/4 cup mayonnaise
    • 2 teaspoons ground cumin
    • salt and pepper, to taste
    • 1/4 cup chopped fresh coriander
    • 1 tablespoon hot salsa, or to taste

    1. In a mixing bowl, combine tuna, red onion, capsicums, beans, chillies and mayonnaise. Season with cumin and salt and pepper; mix in coriander and salsa.

    Great!! Really nice flavours, and quite mild despite the chili and salsa (I deseeded though) so kids should be fine to eat it. I served it on a bed of mixed lettuce & baby spinach. Will definitely be making this again! - 30 Dec 2013
