Beer and Bean Chilli Con Carne

    Here's enough chilli con carne to feed an army! It's a pretty hot recipe so you might want to adjust the fresh chilli and chilli powder to your taste.

    Serves: 12 

    • 1 tablespoon olive oil
    • 1 red capsicum, finely chopped
    • 1 yellow capsicum, finely chopped
    • 1 green capsicum, finely chopped
    • 1 orange capsicum, finely chopped
    • 1 large red onion, finely chopped
    • 1 stalk celery, chopped
    • 1kg pork mince
    • 1kg beef mince
    • 8 fresh chillies, diced
    • 3 (400g) tins diced tomatoes
    • 500g tomato paste
    • 2 (400g) tins red kidney beans
    • 6 tablespoons minced garlic
    • 30ml lime juice
    • 1/2 cup (125ml) tequila
    • 2 cups (500ml) beer
    • 2 1/2 tablespoons chilli powder
    • salt and pepper to taste

    1. Heat the olive oil in a large pot over medium heat. Stir in the red capsicum, yellow capsicum, green capsicum, orange capsicum, onion and celery. Cook until tender. Place pork and beef in the pot and cook until evenly brown. Drain grease.
    2. Mix chillies, diced tomatoes, tomato paste, kidney beans, garlic, lime juice, tequila and beer into the pot. Season with chilli powder, salt and pepper. Bring to a boil. Reduce heat to medium-low and simmer 5 hours.

    Friends said this was the best chili they had ever eaten. I did make some changes, I browned the meats together then drained and added other ingrediants. I added alot more cumin and chili powder.     This needed work. As is; it's basically a tomato based soup. Very sweet. Had to triple (or more)the chili powder and cumin to get it to taste like "chili". I am from Texas and having a few Chili cook-offs under my belt, this is nothing like the chili's that are indicative of the region.     excellent chili. the great smells in the kitchen made everyone hungry. i added a little extreme-hot-sauce and it was a total success. i served with some rolls and some thinly grated chedder. i'm going to make this on more than one football weekend this fall/winter.  -  14 Aug 2005  (Review from Allrecipes USA and Canada)
