    This is a sweet salsa that makes a tropical topping for barbecued meats or fish. Add minced red chillies if you want to add some heat.

    Serves: 4 

    • 1 mango - peeled, stone removed and diced
    • 1 teaspoon extra virgin olive oil
    • 1/2 red capsicum, chopped
    • 2 spring onions, thinly sliced
    • handful chopped fresh coriander
    • 1 lime, juiced
    • 1/4 teaspoon salt
    • 1 pinch cracked black pepper
    • 1 teaspoon honey

    1. Combine the mango, oil, red capsicum, spring onions, coriander and lime juice in small bowl. Stir to combine. Season to taste with salt, black pepper and honey. Refrigerate, or serve immediately.

    AMAZING! Excellent on Fish or chicken. Adds refreshing and light flavour to any dish.  -  29 Sep 2008


    Altered ingredient amounts. I loved this! I used 2 large mangoes, vidalia onion instead of green because that is what I had. Very refreshing, served it with a spicy steak and corn soft taco and black beans and rice. Some of us put it in our taco and some with the rice&beans. Yummy.  -  29 Sep 2008


    Absolutely Fantastic! I used this on chicken like suggested but I also placed it on a bed of lettuce and added a light honey vinaigrette. Yum!!  -  29 Sep 2008
