Pork and Mango Pasta Bake

    This is a different pasta bake, very rich and good. For variation you can substitute cream cheese for cheddar. Serve with a green salad.

    Serves: 8 

    • 500g spaghetti
    • 500g pork mince
    • 1 large onion, chopped
    • 1 mango - peeled, seeded and diced
    • 600g tomato puree
    • 250g Cheddar cheese, grated
    • salt and ground black pepper to taste

    Preparation:10min  ›  Cook:50min  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C. Coat a large baking dish with cooking spray.
    2. Fill a large pot with lightly salted water and bring to a rolling boil. Cook pasta in boiling water until cooked through but still firm to the bite, about 12 minutes. Drain.
    3. Place a large frypan over medium heat; cook the sausage, onion and mango in the frypan until the sausage is completely browned, 5 to 7 minutes. Stir in tomato puree and about half the Cheddar cheese; heat until the cheese is melted. Season with salt and pepper. Stir in cooked spaghetti. Transfer mixture to the prepared baking dish. Top with remaining Cheddar cheese.
    4. Bake in preheated oven until the Cheddar cheese is hot and bubbly, about 30 minutes.

    This was just OK. Kids, ages 7 and 1, enjoyed it. My mango was not that ripe, so I'm not sure if that makes a difference. I couldn't even taste the mango. Just seemed kind of plain to me--no spices other than s&p--and some of the spaghetti noodles got crispy dry in the oven, so you may want to cover for the first portion of the baking process.     My husband hates leftovers... Just cooked this and he wants to have it again, leftover! I did adapt slightly, because I read it, wanted it, and didn't want to go to the store for real ingredients. substituted 4 chopped carrots for mango, added 3 cloves garlic, added a bit of mozzarella, and used crushed tomatoes instead of puree.
