    This is a very different bread you can make in your bread machine. It has a slightly crunchier texture from the polenta and the bite of chilli.

    Serves: 10 

    • 1 1/2 teaspoons active dry yeast
    • 1/2 cup (125ml) water
    • 1 tablespoon butter
    • 1 1/3 cups (170g) plain flour
    • 1/2 cup polenta
    • 1 tablespoon white sugar
    • 1 teaspoon salt
    • 3/4 cup corn kernels
    • 1 tablespoon chopped fresh chilli

    1. If your machine has a Fruit Bread setting add the peppers and whole kernel corn at the signal, or about 5 minutes before the kneading cycle has finished.
    2. Select basic bread setting. Start.
