This is a very simple and pleasing biscuit recipe, Italian in origin. Perfect with a cup of tea in the afternoon!

Serves: 18 

  • 125g butter, softened
  • 1/2 cup (125g) white sugar
  • 3 eggs
  • 2 teaspoons vanilla essence
  • 3 cups (375g) plain flour
  • 3 teaspoons baking powder

  1. Preheat oven to 180 degrees C. Grease baking trays.
  2. In a large bowl cream together the butter and sugar until smooth. Mix in the egg and vanilla. Combine the flour and baking powder; stir into the creamed mixture until blended. Divide dough into walnut sized portions. Roll each piece into a rope and then shape into a loop. Place biscuits 5cm apart on the prepared baking trays.
  3. Bake for 8 to 10 minutes in the preheated oven until firm and golden at the edges.
