    A great quick lunch or dinner recipe and very popular with the kids. Serve it with cooked macaroni or mashed potatoes for a full meal.

    Serves: 4 

    • 1 tablespoon vegetable oil
    • 1 large onion, chopped
    • 2 large capsicums, chopped
    • 500g frankfurts, cut into 1cm pieces
    • 800g tinned diced tomatoes
    • 1 teaspoon dried oregano
    • salt and pepper to taste

    1. Heat oil in large frypan over medium-high heat. Cook the onions and peppers in the oil until tender crisp, about 3 minutes.
    2. Stir in hot dogs and cook until lightly browned, about 3 minutes. Stir in the tomatoes, and season with oregano, salt and pepper; cook for 3 to 5 minutes or until hot dogs are heated through.
