Honey Date Bars

    Here's a really simple recipe for chewy date bars, perfect for a snack or a light breakfast. Healthy and delicious!

    Serves: 6 

    • 2 tablespoons butter
    • 1/2 cup (125ml) honey
    • 2 eggs
    • 3/4 cup (90g) plain flour
    • 1/2 teaspoon baking powder
    • 1 pinch salt
    • 1/2 cup chopped walnuts
    • 1/2 cup dates, pitted and chopped
    • 1/3 cup icing sugar for decoration

    1. Preheat oven to 180 degrees C. Butter a 20cm square cake pan.
    2. Melt the butter over low heat and pour into a large mixing bowl. Add the honey and eggs and beat well. Mix in the flour, baking powder and salt. Mix in the walnuts and dates. Spread batter in pan.
    3. Bake for 25 minutes in the preheated oven or until light brown. Let cool for 5 to 10 minutes. Cut into bars and roll in icing sugar.

    I liked these bars, and they are very fast and easy to make. I didn't have any dates so used raisins. The second batch I left out the raisins and added mini choc. chips instead. Even Better!! Will make these again!  -  11 Dec 2002  (Review from Allrecipes USA and Canada)


    This bar was lite and yummy! A perfect combo of soft and gooey. I didn't have walnuts so I subbed almonds and I didn't quite have enough honey so I used 1/4 cup brown rice syrup too. I mixed in some coconut flakes (unsweetened) into the mixture as well as on top. This is one of those treats that I feel good about sharing with my son and others because I know it's naturally sweetened!
