    Using cake mix and pudding mix you can create a delicious moist cake flavoured lightly with rum. It's great an an easy dessert at Christmas when you are sick of cooking!

    Makes: 1 cake

    • 520g butter cake mix
    • 100g instant vanilla pudding mix
    • 4 eggs, beaten
    • 1/2 cup cold water
    • 1/2 cup light rum
    • 1/2 cup vegetable oil
    • Icing
    • 450g chocolate icing
    • 1/8 cup light rum
    • 1/2 cup chopped pecans

    1. Preheat oven to 165 degrees C. Grease and flour one 25cm ring tin.
    2. Combine the cake mix, pudding mix, eggs, water, rum and oil. Mix until smooth and pour into prepared pan.
    3. Bake for 1 hour or until a skewer comes out clean. Cool for 25 minutes in pan before removing; remove and allow to cool completely.
    4. Prepare the icing by blending together the icing and rum. Ice the cake and sprinkle 1/2 cup chopped pecans over the top. Seal in airtight container.
