Simple Nut Cake
A delicious and simple nut cake. This recipe calls for pecans but you can substitute other nuts such as walnuts or almonds.
Ingredients
Serves: 24
- 1 1/2 cups (330g) white sugar
- 1/2 cup copha
- 2 cups (250g) sifted plain flour
- 2 tablespoons baking powder
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 cup finely chopped pecans
- 1 cup (250ml) milk
- 3 egg whites

- Preheat oven to 180 degrees C. Grease and flour 2 - 23cm round cake tins. Sift flour, baking powder, nutmeg and salt together and set aside.
- In a large bowl, cream sugar and copha until light and fluffy. Add flour mixture alternately with milk. Stir in nuts.
- In a separate clean bowl, whip the egg whites until stiff peaks form. Quickly but gently fold into the batter.
- Divide batter into cake tins. Bake for 25 to 30 minutes or until a toothpick inserted into the cake comes out clean.

It was really delicious, I tweaked the recipe slightly. I only used half the hickory nuts since they are difficult to deshell. I added 1/2c of dried pomegranates. Then I thought a lite glaze would be excellent so I made a lemon glaze using 1/2c confectioner's sugar, 2 1/2tsp milk, and a little more than 1/4tsp of lemon extract.
