    To make a double batch, double everything except the meat and onion. Use 1 can each of pinto or borlotti and red kidney beans, that is how I normally make it.

    Serves: 6 

    • 500g beef mince
    • 1 onion, peeled and chopped
    • 1 (400g) can diced tomatoes
    • 1 (400g) can tomato puree
    • 1 (400g or similar weight) red kidney or borlotti beans
    • 1 teaspoon chilli powder or to taste
    • 1 teaspoon ground cumin
    • 1/2 teaspoon ground cayenne pepper
    • 1 teaspoon crushed fresh garlic

    1. In a large saucepan over medium-high heat, stir and cook beef and onion until meat is no longer pink. Stir in tomatoes, tomato puree, beans, chilli powder, cumin, cayenne and garlic. Cover, reduce heat and simmer for 20 minutes. Adjust seasonings to taste.

    Serve with cooked rice or as a filling for tacos.
