    This lovely moist pineapple fruit cake is especially good with sour cream or cream cheese icing. The perfect thing for guests with coffee.

    Serves: 18 

    • 1 1/2 cups (330g) white sugar
    • 1 teaspoon bicarb soda
    • 2 cups (250g) plain flour
    • 2 eggs
    • 550g tinned crushed pineapple with juice
    • 1 cup chopped walnuts
    • 3/4 cup shredded coconut

    Preparation:20min  ›  Cook:40min  ›  Ready in:1hour 

    1. Preheat oven to 180 degrees C. Grease one 20x30cm pan.
    2. In a large bowl mix sugar, bicarb soda and flour by hand. Mix in eggs and pineapple with juice. Stir in nuts and coconut. Pour into prepared pan.
    3. Bake for 35 to 40 minutes. Cool on wire racks.
