A very easy spread to make for plum pudding or Christmas cake. Sure to be a big hit with everyone!


Serves: 12 

  • 250g butter, softened
  • 1 cup (185g) icing sugar
  • 1/4 cup dark rum
  • 1 teaspoon vanilla essence
  • 1/4 teaspoon ground nutmeg

Preparation:7min  ›  Ready in:7min 

  1. Beat butter until light and fluffy, about 2 minutes. Sift icing sugar into the butter. Add rum, vanilla and nutmeg. Beat on high speed for 5 minutes. Serve at once over cake or cover and refrigerate. Bring to room temperature before using if refrigerated.
