Garlic Baked Fish

A delicious and healthy way to serve fresh fish fillets. You can adjust garlic to taste - I like a lot. I made this for a dinner party and everybody loved it!


Serves: 6 

  • 1 kg white fish fillets
  • salt and pepper to taste
  • 1/4 cup olive oil
  • 1/2 cup chopped fresh parsley
  • 1 yellow onion, thinly sliced
  • 2 stalks celery, chopped
  • 1 green capsicum, chopped
  • 500g diced tomatoes
  • 2 tablespoons capers
  • 4 cloves garlic, minced

  1. Preheat oven to 220 degrees C.
  2. Wash fish and pat dry. Cut into serving size pieces and place in a 20x30cm baking dish. Sprinkle with salt and pepper. Stir together the olive oil, parsley, onion, celery, capsicum, tomatoes, capers and garlic; pour over the fish.
  3. Bake until fish is slightly opaque in the center, about 20 minutes. Remove from oven; let stand for 10 minutes before serving.
