    Here's a very simple way to cook fish and give it a tropical taste. It's best to use a blander fish, like tilapia, that will really absorb the flavours.

    Serves: 4 

    • 2 tablespoons cooking oil
    • 1 onion, chopped
    • 2 cloves garlic, crushed
    • 4 white fish fillets
    • salt and pepper to taste
    • 1 1/2 cups (375ml) coconut milk

    1. Heat the oil in a frypan over medium heat. Cook and stir the onion and garlic in the hot oil until the garlic is lightly browned and the onion is glossy, 7 to 10 minutes. Add the fish; season with salt and pepper. Cover and cook for 2 minutes. Add the coconut milk and stir; cover again and cook until the coconut milk appears oily, about 10 minutes.
