Quick Pasta Puttanesca

    A lovely flavourful pasta with olives, garlic, pepperoncini and basil. Very easy to throw together for a weeknight meal.

    Serves: 4 

    • 1 packet (500g) shell pasta
    • 625g tomatoes, chopped
    • 5 cloves garlic, crushed
    • 15 kalamata olives, pitted and sliced
    • 1 cup loosely packed torn fresh basil leaves
    • 3 tablespoons olive oil
    • 10 pepperoncini or 2 roasted red capsicums

    1. Combine tomatoes, garlic, olives, basil, olive oil and pepperoncinis. Stir together and allow to marinate as long as you have time for, overnight is best, although it's fine to eat right away too.
    2. Cook pasta according to the packet directions; drain. Toss with sauce and serve.
