Barbecued Fruit Dessert

    Did you ever think of barbecuing fruit? These mixed fruit skewers are the perfect dessert after you have finished enjoying your chops or burgers!

    Serves: 6 

    • 125g margarine
    • 1/4 cup honey
    • 3 fresh peaches, pitted and quartered
    • 3 fresh plums, pitted and quartered
    • 3 bananas, cut into 4 pieces each
    • 12 strawberries, hulled
    • 12 skewers

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. Preheat the barbecue for medium heat and place a large sheet of foil onto the grate.
    2. Melt the margarine and honey together in a small saucepan over medium heat. Reduce heat to low and cook gently, stirring occasionally until slightly thickened, about 5 minutes. Do not let the sauce boil.
    3. Thread a peach quarter, a plum quarter, a banana piece and a strawberry onto each skewer. Place the skewers onto the foil on the preheated grill; spoon margarine-honey mixture over each skewer.
    4. Barbecue until the fruit is softened and the sauce has thickened and cooked onto the fruit, about 5 minutes. Flip the skewers, spoon more margarine-honey sauce over each and barbecue for about 5 more minutes on the other side.

    Awesome! If you've ever had grilled fruit before you'll love this! For the sauce, I used 2 Tbsp. of honey and 2 Tbsp. of brown sugar along with a bit of vanilla and cinnamon in order to give it more of a "caramel" flavor. I didn't bother doing it on the stove top - just microwave it for quicker and easier results. Melt the margarine or in my case Land O Lakes Lite butter and add the rest of the ingredients. I skewered the fruit and placed it on a lightly oiled grate. The strawberries cooked a bit faster than the rest of the fruit but that doesn't matter because the smell coming off the grill is Heavenly! There's more than enough sauce for basting so it's great to drizzle over the fruit when it comes off the grill (or just about anything else you can think of). This is perfect all by itself, but would be wonderful over pound cake or ice cream if you want to take this over the top.     these were really good but I made a few changes and my family loved them. I added a dash of cinnamon and vanilla extract to it and they came out great. We used just peaches and strawberries and didn't cook them as long as recommended.  -  08 Sep 2010  (Review from Allrecipes USA and Canada)
