Lemon Feta Pasta

    This is a great and very flavourful pasta with lemon juice for brightness. Perfect for a light lunch or dinner, or even as a side dish at a barbecue.

    Serves: 6 

    • 1/4 cup olive oil
    • 1/2 cup (125ml) fresh lemon juice
    • 1/2 cup pitted kalamata olives, chopped
    • 2 ripe tomatoes, seeded and diced
    • 1 red capsicum, chopped
    • 1 red onion, chopped
    • 2 cloves garlic, minced
    • 1 teaspoon finely chopped fresh oregano
    • 250g crumbled feta cheese
    • 250g risoni pasta
    • 1 cup chopped fresh parsley

    1. Stir together olive oil, lemon juice, olives, tomatoes, red capsicum, red onion, garlic, oregano and feta cheese in a large bowl. Let stand at room temperature for 1 hour.
    2. Bring a large pot of lightly salted water to a boil. Add the risoni and cook for 8 to 10 minutes or until al dente; drain and toss the tomato mixture. Sprinkle with chopped parsley to serve.

    I had this recipe once at a friends house and was blown away. This is probably my favourite meal ever. I server it with a side of grilled chicken breast and it's complete. Some posters have commented on the overpowering of the lemon juice, but I totally have to disagree. It's absolutely perfect as the recipe states. It's also delicious if you throw in some diced cucumber. If I had to live off of one meal for the rest of my life, this would be it!
