Good meaty vegetables like eggplant, zucchini and mushrooms respond really well to barbecuing especially when marinated beforehand for an hour.

    Ingredients
    Serves: 6

    • 1/3 cup olive oil
    • 1/3 cup lemon juice
    • 1/2 cup coarsely chopped fresh basil
    • 2 cloves garlic, crushed
    • 1 small eggplant, thickly sliced
    • 2 red capsicums, cut into wide strips
    • 3 small zucchini, thickly sliced
    • 6 medium cup mushrooms, stems removed

    Directions
    Preparation:10min  ›  Cook:5min  ›  Extra time:1hour marinating  ›  Ready in:1hour15min

    1. Whisk together oil, juice, basil and garlic in a medium bowl. Pour the marinade mixture over the vegetables in a large shallow dish. Cover and refrigerate for 1 hour.
    2. Preheat barbecue or grill pan to high heat.
    3. Place vegetables directly on the barbecue or on skewers. Cook for 2 to 3 minutes each side, brushing frequently with the marinade, or until tender.

Used different ingredients. This recipe was excellent. I added asparagus to the veggies. I marinated overnight which produced a much stronger lemon flavour, Yum. I also added salt and pepper and extra garlic to the marinade. My husband loved this recipe and it made for a quite colourful presentation. If you marinate overnight, you might not want to add the eggplant until the next morning as it overabsorbs the marinade and may be too strong in flavour for some. - 29 Sep 2008

Used different ingredients. The 4 stars is more from my way of preparing. Should not have left them to marinated as long as I did (about 3 hours)as the lemon taste was a tiny bit too strong. I also only had one clove of garlic, too bad, could have used more! The vegetable mix was wonderful. I love eggplant and you can do almost any vegie mix with this. Throw in a jalapeno for a little bite! Had only dried basil but it worked fine. Always marinate in a bag - so much easier to just flip it over. Will be making again for sure! - 29 Sep 2008

This recipe was okay. If I make it again, I will double the marinade. - 29 Sep 2008
