Crispy Marshmallows

    You have to try this amazing treat. It's the perfect thing for kids birthday parties. Rice bubble coated caramel marshmallows! What's not to love?

    Serves: 50 

    • 500g rice bubbles
    • 1 cup margarine
    • 1 (375ml) tin sweetened condensed milk
    • 375g individually wrapped caramels, unwrapped
    • 500g large marshmallows

    Preparation:25min  ›  Cook:5min  ›  Ready in:30min 

    1. Line a baking tray with greaseproof paper. Pour the rice bubbles into a large bowl.
    2. Combine the margarine, sweetened condensed milk and caramels in the top of a double boiler. Stirring constantly, cook over lightly simmering water until melted and combined, about 5 minutes.
    3. Use a wooden skewer to dip each marshmallow in the hot caramel mixture. Immediately roll caramel-coated marshmallow in the rice bubbles. Remove from skewer and place on the waxed paper to harden.

    These little goof balls are delish! I was looking for something new for a charity bake sale and these worked out great. I will definately make them again. I used toothpicks to dip and coat my marshmallows. I left the toothpicks in and because it is close to Easter and I had them on hand, I topped each toothpick with one of those cute bunny shaped marshmallows. The recipe makes a lot of sauce; I stopped at 60 marshmallows and had sauce left over. Bonus- this sauce, once cooled, is perfect for apple dipping!     These are always a big hit. I don't really like marshmallows but I can't resist these treats. I use crushed oreos, crushed golden grams or toasted coconut as toppings and make multiple flavors for each batch for a twist.  -  20 Jun 2009  (Review from Allrecipes USA and Canada)
