You have to try this amazing treat. It's the perfect thing for kids birthday parties. Rice bubble coated caramel marshmallows! What's not to love?


Serves: 50 

  • 500g rice bubbles
  • 1 cup margarine
  • 1 (375ml) tin sweetened condensed milk
  • 375g individually wrapped caramels, unwrapped
  • 500g large marshmallows

  1. Line a baking tray with greaseproof paper. Pour the rice bubbles into a large bowl.
  2. Combine the margarine, sweetened condensed milk and caramels in the top of a double boiler. Stirring constantly, cook over lightly simmering water until melted and combined, about 5 minutes.
  3. Use a wooden skewer to dip each marshmallow in the hot caramel mixture. Immediately roll caramel-coated marshmallow in the rice bubbles. Remove from skewer and place on the waxed paper to harden.
