This is a very hot, spicy and tangy side dish for a vegetarian feast. You can, of course, reduce the lemon and seasonings to fit your taste. Enjoy!


Serves: 2 

  • 1 (400g) tinned chickpeas
  • 1 lemon, juiced
  • 1 teaspoon chilli flakes
  • 1 clove garlic, quartered
  • 2 tablespoons minced onion
  • 1 tablespoon picante salsa
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon Cajun seasoning
  • 1/4 teaspoon seasoning salt
  • 1/4 teaspoon paprika

  1. Drain off about half of the juice from the chickpeas and put them into a saucepan. Mix in the lemon juice, chilli flakes, garlic, onion, picante salsa, pepper, Cajun seasoning, seasoning salt and paprika. Bring to a simmer over medium heat and cook for about 7 minutes. Remove the garlic before serving.
