    This recipe make a deliciously fruity bar, good for snacks or for dessert. Coconut and mixed fruits make it practically tropical!

    Serves: 12 

    • 250g tinned fruit salad
    • 65g butter, softened
    • 1/3 cup white sugar
    • 1 egg
    • 1/4 teaspoon vanilla essence
    • 1 1/4 cups (155g) plain flour
    • 1/4 teaspoon baking powder
    • 1/4 teaspoon bicarb soda
    • 1/4 teaspoon salt
    • 1/2 cup shredded coconut
    • 1/4 cup maraschino cherries, chopped

    1. Drain the fruit salad and reserve 1/3 cup of the syrup. Chop the drained fruit and set it aside.
    2. Stir together in a bowl the flour, bicarb soda, baking powder and salt.
    3. In a large bowl cream together the butter and sugar. Beat in the egg and vanilla essence.
    4. Add the flour mixture, alternating with the syrups, to the creamed mixture. Mix well. Stir in the chopped fruit, the coconut and the cherries.
    5. Spread dough into a greased 23cm square pan. Bake at 180 degrees C for 30 to 35 minutes. Cool. Sprinkle sifted icing sugar over the top if desired. Cut into squares.
