    This is our favourite butter cake recipe. It is so simple but delightfully moist. You don't even need to ice it but a simple lemon icing is good.

    Makes: 1 cake

    • 250g butter
    • 2 cups white sugar
    • 4 eggs
    • 2 teaspoons vanilla essence
    • 2 3/4 cups plain flour
    • 3 teaspoons baking powder
    • 1 teaspoon salt
    • 1 3/4 cups (440ml) milk

    1. Preheat oven to 180 degrees C. Grease and flour one 23x33cm cake tin.
    2. Cream together butter and sugar. Beat in eggs and vanilla.
    3. In a separate bowl, combine flour, baking powder and salt. Add to creamed mixture alternately with milk. Mix well. Pour batter into prepared tin.
    4. Bake for 45 minutes, or until cake tests done.
