Cornflakes, rolled oats, shredded coconut and walnuts all add their own special touches to this chocolate chip cookie recipe. They won't last!


Makes: 84 cookies

  • 250g butter
  • 1 cup vegetable oil
  • 1 cup white sugar
  • 1 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1/2 teaspoon salt
  • 1 teaspoon bicarb soda
  • 1 teaspoon cream of tartar
  • 3 1/2 cups plain flour
  • 2 cups Cornflakes(TM)
  • 1 cup rolled oats
  • 1 cup shredded coconut
  • 1 cup walnuts, roughly diced
  • 340g chocolate chips

  1. Preheat oven to 180 degrees C.
  2. In a large bowl, beat together the butter, vegetable oil, white sugar and brown sugar until smooth and creamy. Next add egg, vanilla, salt, bicarb soda and cream of tartar then mix with an electric mixer until slightly fluffy. With a spoon, gradually stir in flour until well blended. Stir in Cornflakes, oats, coconut, walnuts and chocolate chips. Drop by heaping tablespoonfuls onto ungreased baking trays, 5cm apart.
  3. Bake in a preheated oven for 12 minutes or until slightly brown. Remove from oven and allow biscuits to cool 5 minutes on baking trays before removing to wire racks to cool completely.
