Teriyaki Pasta Salad

    This is a quick and easy hot teriyaki pasta salad with garlic, mushrooms, carrots and wilted spinach.

    Ingredients
    Serves: 8 

    • 500g spaghetti
    • 1 tablespoon sesame oil
    • 1 clove garlic, chopped
    • 1 red onion, coarsely chopped
    • 300g fresh mushrooms, sliced
    • 1 cup teriyaki sauce
    • 2 carrots, grated
    • 250g spinach, rinsed

    Directions
    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Place in large bowl.
    2. Meanwhile, in large frypan or wok heat oil over high heat. Add garlic, onion and mushroom. Cook until onions are translucent. Add teriyaki sauce and carrot, cook 3 minutes more.
    3. Add cooked vegetable mixture to pasta, toss. Add spinach and toss. Cover for 5 minutes to wilt spinach. Serve warm.

    This recipe was O.K. , it had veggies that are good for you wich is a plus, But, it just wasn't that tasty. I would not make it again.  -  20 Aug 2001  (Review from Allrecipes USA and Canada)

    Enjoyed this recipe very much, and got 2 requests for the recipe after bringing it to a family get-together. Recipe did not state to break the spaghetti before cooking. I used spaghettinibroken into 4 pieces, and using a bag of pre-washed baby spinach made it quick and easy. Reheated well in the microwave.     Delicious pasta dish. I served this along with the Fiery Pork Skewers recipe I also found on this site. I only used about 1/2 lb of pasta (I used vermicelli), but I left the rest of the ingredient amounts the same as the full recipe. There was just too much pasta compared to sauce in the full recipe. This was easy to make while my husband was outside grilling the skewers. My 10 year old really liked this dish - he asked me to make it again as just the main dish even. I saved the leftovers for lunch tomorrow - I think it will be just as good as a cold salad.  -  23 Aug 2005  (Review from Allrecipes USA and Canada)
