Linguine with Broccoli and Red Capsicum

This simple midweek pasta dish is colourful, healthy and delicious.

Ingredients
Serves: 6 

  • 1, 500g packet linguine pasta
  • 625g fresh broccoli, cut into florets
  • 2 tablespoons extra virgin olive oil
  • 30g butter
  • 3 cloves garlic, crushed
  • 1 large red capsicum, seeded and thinly sliced
  • grated Parmesan cheese to serve

Directions
Preparation:5min  ›  Cook:15min  ›  Ready in:20min 

  1. Bring a large saucepan of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente. Drain and keep warm.
  2. Steam broccoli with 2 tablespoons water in microwave for 6 to 7 minutes.
  3. In a large frying pan, heat olive oil and butter over low heat. Stir in garlic (more or less to suit your taste) and red capsicum. Fry gently until capsicum softens.
  4. Drain broccoli and add to frying pan.
  5. Toss the pasta gently through the vegetable mixture until heated through. Sprinkle with Parmesan cheese.

Altered ingredient amounts. Very tasty! I found that a whole pcak of Linguine was too much for the sauce/vegetables. I recommend only cooking half the apcket or else doubling the rest. I used half and it came out very nice. - 21 Jul 2008

Love this recipe - although a whole packet of pasta is too much, and it is a little dry (a little more oil sorted this out). But so tasty and perfect for the vegetarian in my house. - 05 Aug 2010

Something else. made a few modifications and it was excellent: No butter, only olive oil, for sauteeing. One red pepper, one green pepper, three diced fresh tomatoes, ten oil cured black olives (when we couldn't find any anchovies), and three heaping spoons of diced fresh garlic. Also a teaspoon and a half of salt Strongly considered adding some chillies... Instead of linguine, we used penne and it turned out delicious warm and at room temperature. - 21 Jul 2008
