Want a fruitcake for Christmas but don't want to go to the trouble? This recipe uses date loaf mix from the supermarket and a handful of mixed glace fruit for an easy and delicious alternative.

Serves: 14 

  • 2 eggs
  • 2 cups (500ml) water
  • 1 (415g) packet date loaf mix
  • 2 cups chopped pecans
  • 2 cups raisins
  • 680g mixed glace fruit

  1. Preheat oven to 180 degrees C. Grease and flour bottom and sides of a 25cm ring tin.
  2. In a large bowl combine eggs and water. Stir in date loaf mix, chopped pecans, raisins and glace fruit. Pour into prepared tin.
  3. Bake for 75 to 85 minutes, or until skewer inserted in centre comes out clean.
  4. Cool in pan for 30 minutes. Loosen edges and remove from pan. Cool completely. Wrap in plastic wrap or foil and store in refrigerator.
