A full flavoured vegetarian soup that uses smoked sausages, cabbage, tomatoes and lentils along with seasoning from thyme and cayenne pepper.
We used chorizo instead of veg sausages, & half a cabbage. Instead of crumbling stock cubes and pouring water over, pre-made the stock up first. Used canned lentils rather than dry & reduced cooking time to around 25 mins (excluding browning of sausages prior). Pretty you'd recipe, will reduce liquid more next tone to make it thicker. Throw everything into a crock pot. That's what I did and it came out wonderful. The only only only difference is that I used 6 cups of chicken stock vs the 4 cups water and 2 bouillon cubes and 2 cups of shredded cabbage. We came home to delicious hearty soup thick soup. I used turkey smoked sausage and didn't have head cabbage, but used a portion of a bag of 3-color slaw I had (which is mostly shredded cabbage anyway). I used half the cayenne and it was still plenty spicy for my taste and petite diced tomatoes. Hearty, good soup...I will make this again. - 30 Nov 2006 (Review from Allrecipes USA and Canada)
