Vegetarian Smoked Sausage Soup

A full flavoured vegetarian soup that uses smoked sausages, cabbage, tomatoes and lentils along with seasoning from thyme and cayenne pepper.


Serves: 4 

  • 2 tablespoons olive oil
  • 220g (1 cup) dry green or brown lentils
  • 1 small onion, diced
  • 3/4 cup (60g) finely sliced cabbage
  • 1 clove garlic, crushed
  • 2 vegetarian smoked sausages, diced
  • 1 (400g) tin diced tomatoes
  • 2 vegetable stock cubes
  • 4 cups (1 litre) water
  • 1 bay leaf
  • 1 teaspoon dried thyme leaves
  • 1/2 teaspoon cayenne pepper
  • salt and pepper, to taste

  1. Heat oil in a large saucepan over medium heat. Stir in lentils, onion, cabbage and garlic, Fry stirring once or twice for 5 minutes or until vegetables are tender.
  2. Stir in sausage and tomatoes. Crumble vegetable stock cubes over mixture then pour in the water. Stir in bay leaf, thyme and cayenne pepper.
  3. Bring to a boil then cover and simmer until lentils are tender; about 30-45 minutes. Season with salt and pepper to taste.

We used chorizo instead of veg sausages, & half a cabbage. Instead of crumbling stock cubes and pouring water over, pre-made the stock up first. Used canned lentils rather than dry & reduced cooking time to around 25 mins (excluding browning of sausages prior). Pretty you'd recipe, will reduce liquid more next tone to make it thicker.
