    These are delicious biscuits with a very faint sour taste from the vinegar that contrasts beautifully with the sweetness of the sugar.

    Serves: 72 

    • 3 cups (375g) plain flour
    • 1 1/2 teaspoons bicarb soda
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground cloves
    • 1 cup (220g) white sugar
    • 1 egg
    • 3/4 cup (185ml) golden syrup
    • 1 1/2 teaspoons cider vinegar
    • 1 cup copha

    1. Preheat oven to 180 degrees C. Lightly grease 2 baking trays.
    2. Combine flour, bicarb soda and spices. In a large bowl cream copha and sugar. Beat in the egg. Beat in the golden syrup and cider vinegar. Gradually blend in the dry ingredients.
    3. On a floured surface roll out dough to a thickness of 5mm. Using a 4cm round cookie cutter, cut dough into rounds and place 4cm apart on prepared baking trays. Bake for 8-12 minutes--until firm to the touch. Transfer to wire racks to cool.
