    These are delicious biscuits with a very faint sour taste from the vinegar that contrasts beautifully with the sweetness of the sugar.

    Ingredients
    Serves: 72 

    • 3 cups (375g) plain flour
    • 1 1/2 teaspoons bicarb soda
    • 1 teaspoon ground cinnamon
    • 1/4 teaspoon ground cloves
    • 1 cup (220g) white sugar
    • 1 egg
    • 3/4 cup (185ml) golden syrup
    • 1 1/2 teaspoons cider vinegar
    • 1 cup copha

    Directions

    1. Preheat oven to 180 degrees C. Lightly grease 2 baking trays.
    2. Combine flour, bicarb soda and spices. In a large bowl cream copha and sugar. Beat in the egg. Beat in the golden syrup and cider vinegar. Gradually blend in the dry ingredients.
    3. On a floured surface roll out dough to a thickness of 5mm. Using a 4cm round cookie cutter, cut dough into rounds and place 4cm apart on prepared baking trays. Bake for 8-12 minutes--until firm to the touch. Transfer to wire racks to cool.

    after carefully following the recipe, the mixture was far too sticky to roll out, so had to hand mold the biscuits. Nice flavour, but not cripy, but chewy!  -  31 Oct 2013  (Review from Allrecipes UK & Ireland)

    followed recipe but you need to add a lot more flour in than stated. once you got a pliable dough it is a great recipe, I dread to think how they would have turned out if I hadn't added more flour.  -  15 Aug 2015  (Review from Allrecipes UK & Ireland)
