As long as you make sure the chocolate chips are non-dairy, this chocolate cake is completely egg-free, dairy-free and nut-free! You will never know the difference.

Serves: 8 

  • 1 1/2 cups (185g) plain flour
  • 1/2 teaspoon salt
  • 1 cup (220g) white sugar
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon bicarb soda
  • 5 tablespoons vegetable oil
  • 1 tablespoon white vinegar
  • 1 teaspoon vanilla essence
  • 1 cup (250ml) cold water
  • 1/2 cup dark chocolate chips

  1. Preheat oven to 180 degrees C. Grease a 20cm square baking pan.
  2. In a large bowl combine flour, salt, sugar, cocoa powder and bicarb soda. Mix well with a fork then stir in oil, vinegar and vanilla essence. When dry ingredients are thoroughly moistened pour in cold water and stir until batter is smooth. Stir in chocolate chips and pour batter into prepared pan.
  3. Bake in preheated oven for 30 to 35 minutes until a toothpick inserted in centre comes out clean. Cool on a rack.
