Vegetable Pasta Sauce

    This is a simple and simply delicious pasta sauce recipe. It's tasty, full of vegetables, low fat and also vegan. Adjust the salt to your taste.

    Serves: 3 

    • 1 teaspoon vegetable oil
    • 1/2 small yellow onion, diced
    • 2 cloves garlic, minced
    • 5 large tomatoes, cubed
    • 1 small green capsicum, diced
    • 1/2 teaspoon salt
    • 1/2 teaspoon black pepper
    • 1 teaspoon dried basil leaves
    • 1/2 teaspoon dried oregano

    Preparation:15min  ›  Cook:20min  ›  Ready in:35min 

    1. In a frypan over medium-low heat saute onion and garlic in the vegetable oil. Add tomatoes to onion and garlic mixture. Stir in diced capsicum, salt, pepper, basil and oregano. Let simmer for 20 minutes, stirring occasionally. Turn down heat if it starts to stick.

    I made this while babysitting one night. The parents had left some nasty frozen chicken strips for me to make and I just couldn't feed them such junk. Both girls just loved this!
