Squid Ink Pasta with Crab

    This is an easy crab pasta recipe. I like to serve this with black (squid ink) pasta for a dramatic presentation, but it can be made with normal pasta as well.

    Serves: 8 

    • 500g uncooked black squid ink pasta
    • 1 tablespoon butter
    • 3 cloves garlic, minced
    • 1/2 cup (125ml) chicken stock
    • 1 cup light cream
    • 6 tablespoons grated Parmesan cheese
    • 1 teaspoon dried basil
    • 1 teaspoon dried parsley
    • 1 pinch ground black pepper to taste
    • 500g imitation crabmeat, flaked

    1. Bring a large pot of lightly salted water to a boil. Add pasta, cook for 8 to 10 minutes until al dente, and drain.
    2. Melt the butter in a frypan over medium heat and cook the garlic 1 minute. Pour in the chicken stock and cream. Cook and stir until heated through.
    3. Mix the Parmesan cheese into the frypan. Cook and stir until melted. Season the mixture with basil, parsley and pepper. Mix in the imitation crabmeat and continue cooking until heated through. Serve over the cooked pasta.

    This was a very good and easy recipe. I substituted the Half and Half and used a can of reduced calerie cream of asparagus (or cream of chicken) soup and 2% shredded cheese. I also used the spinach feticcine. I was great.  -  15 Feb 2009  (Review from Allrecipes USA and Canada)
