    This Mediterranean recipe can be barbecued or grilled. Fresh rosemary can be used instead of thyme for this simple lamb recipe.

    Ingredients
    Serves: 12 

    • 1/2 cup (125ml) olive oil
    • 3 tablespoons lemon juice
    • handful chopped fresh thyme
    • salt and freshly ground black pepper to taste
    • 12 lamb forequarter chops

    Directions
    Preparation:10min  ›  Cook:10min  ›  Ready in:20min 

    1. Stir together olive oil, lemon juice and thyme in a small bowl. Season with salt and pepper to taste. Place lamb chops in a shallow dish and toss with the olive oil mixture. Marinate for 1 hour.
    2. Preheat barbecue for high heat. Lightly oil the hotplate. Place lamb chops on barbecue and discard marinade. Cook for 10 minutes, turning once or till cooked to your liking.

    Nice! But I added garlic and rosemary to the marinade cos that's what you generally seem to do with lamb. Plus I cooked them in a frypan using a bit of the marinade to cook them in. You could probably grill them too. - 24 Feb 2009

    Used different ingredients. Added garlic and rosemary to the marinade and cooked in a frypan-not barbie...just because it was easier. - 24 Feb 2009
