Easiest Chocolate Chip Cookies

    Sometimes you just want a chocolate chip cookie with no trouble! This recipe uses premade vanilla cake mix for quick and easy results.

    Makes: 48 cookies

    • 1 (520g) packet vanilla cake mix
    • 125g butter, softened
    • 2 eggs
    • 1 teaspoon vanilla essence
    • 2 cups dark chocolate chips

    Preparation:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat oven to 180 degrees C.
    2. Pour the cake mix into a large bowl. Beat in the butter, eggs and vanilla with an electric mixer until well blended. Stir in the chocolate chips. Drop by rounded spoonfuls onto baking trays.
    3. Bake for 11 to 15 minutes in the preheated oven until the edges are golden. Cool on baking trays for a few minutes before removing to cool on wire racks.

    SO EASY! I used Pilsbury Classic Yellow cake mix (w/ pudding in the mix) and they were delicious! The cookies were even better the next day. Be careful not to over cook them. I took mine out the second I saw a very light golden color around the sides. I let them continue cooking on the baking sheet until they were cool enough to sample- then off the the cooling rack.     It might not be the BEST cookie you've ever had but it probably will be the easiest you've ever made. It also works well with a chocolate cake mix, which my family prefers. ---- I no longer own an electric beater and found that this recipe can be done with a big spoon.
