Easy Mashed Potato Soup

    You can vary this recipe by using leeks instead of onions or cream instead of milk. Or try adding fresh herbs.

    Serves: 7 

    • 1 tablespoon butter
    • 1 large onion, chopped
    • 1 1/4 kg leftover mashed potatoes
    • 4 cups (1 litre) chicken stock
    • 1/2 cup (125ml) semi skimmed milk
    • salt and freshly ground black pepper to taste

    1. In a medium soup pot, melt butter over low heat and saute onions until tender. Stir in the mashed potatoes and then slowly add the chicken stock. Stirring, add milk (use more or less to achieve desired creaminess). Cook until heated through and season with salt and pepper to taste.

    Altered ingredient amounts. Very easy and very tasty! Perfect comfort food. I added a bit more milk and let it simmer a while to really let the flavours blend.  -  29 Sep 2008


    This recipe was good, & I will probably make it again because it was so easy & yummy. However, I may have made it wrong, as I didn't expect it to be like a thick "mashed potato soup." Adding a bit more chicken stock & milk didn't help me to get the consistancy I was looking for - a more creamy effect.  -  29 Sep 2008
