Chocolate Chip Cookies with Nuts and Raisins

    These amazing chocolate chip cookies have walnuts, sultanas, raisins and shredded coconut for a wild blend of flavours and textures. Delicious!

    Makes: 72 cookies

    • 5 cups rolled oats
    • 500g butter
    • 2 cups white sugar
    • 2 cups packed dark brown sugar
    • 4 eggs
    • 2 teaspoons vanilla essence
    • 4 cups plain flour
    • 1 teaspoon salt
    • 2 teaspoons baking powder
    • 2 teaspoons bicarb soda
    • 5 cups dark chocolate chips
    • 220g chocolate, grated
    • 3 cups walnuts, diced
    • 1 cup sultanas
    • 1 cup raisins
    • 1 1/2 cups shredded coconut

    1. In a food processor whiz the oats into powder. Preheat oven to 190 degrees C.
    2. Cream butter and both sugars. Add eggs and vanilla. Mix in flour, ground oats, salt, baking powder and bicarb soda. Stir in chocolate chips, grated chocolate, nuts, sultanas, raisins and coconut.
    3. Roll into balls and place 5cm apart on baking tray. Bake for 6 minutes in preheated oven.

    Oh my goodness - these are the best cookies I've ever made - and I'm really picky! I didn't have any chocolate chips or chocolate bars in the house, but I did have semi-sweet squares of baking chocolate that I chopped & grated. I added 2 teaspoons of cinnamon.
