    A great way to eat barbecued lamb chops is topped with cracked peppered bacon and sauteed mushrooms. Simple and very hearty.

    Serves: 4 

    • 2 tablespoons olive oil
    • 250g sliced fresh mushrooms
    • 8 slices bacon
    • 4 lamb chops
    • 1 teaspoon cracked black peppercorns
    • 1 pinch seasoned salt to taste

    1. Preheat the barbecue for high heat.
    2. While the barbecue warms up, heat the olive oil in a large frypan over medium heat. Add the mushrooms; cook and stir until tender. Set aside.
    3. Season the bacon slices with pepper and place them on the barbecue. Cook bacon until crisp, turning once, then set aside. Season the lamb chops with seasoned salt and place them on the barbecue. Cook to your desired degree of doneness, about 3 minutes per side for medium.
    4. Serve each chop with two slices of bacon over it and top with the sliced mushrooms.
